pasta w/ avocado sauce

This pasta dish comes together super fast for an easy week night meal, and is completely vegan but full of healthy fats. It's a great way to use up a ripe avocado!
ingredients
- penne
- 1 avocado
- 2 tbsp olive oil
- 1 lemon, juiced
- 1/2 pint cherry tomatoes, optional, halved
instructions
- Step 1 Bring water to boiling in medium stock pot, add salt and penne. Cook to al dente, about 10-11 minutes.
- Step 2 Cut cherry tomatoes in half, and season with a pinch of salt. Cut avocado in half and remove pit. Add avocado, lemon juice, salt, and olive oil to medium bowl, mash using two forks. Add pasta water as needed to thin the sauce.
- Step 3 Drain the pasta water, then add avocado sauce back into the pot with the pasta, along with cherry tomatoes if using. Stir to combine, then serve.
