chickpea salad sandwich w/ arugula

ingredients
- 1 can chickpeas, drained and rinsed
- 2 tbsp Greek yogurt
- 1 tbsp pickle juice
- 1 tbsp dried dill
- 1 tsp Dijon mustard
- bread, sliced & toasted
- arugula, optional
- radishes, sliced, optional
instructions
- Step 1 Drain and rinse chickpeas in a bowl with a paper towel. Discard paper towel.
- Step 2 Combine the rest of the ingredients except bread. Mash together.
- Step 3 If possible, refrigerate at least 30 mins. Lightly toast bread, assemble sandwiches, top with arugula.
