chickpea salad sandwich w/ arugula

ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tbsp Greek yogurt
  • 1 tbsp pickle juice
  • 1 tbsp dried dill
  • 1 tsp Dijon mustard
  • bread, sliced & toasted
  • arugula, optional
  • radishes, sliced, optional

instructions

  1. Step 1 Drain and rinse chickpeas in a bowl with a paper towel. Discard paper towel.
  2. Step 2 Combine the rest of the ingredients except bread. Mash together.
  3. Step 3 If possible, refrigerate at least 30 mins. Lightly toast bread, assemble sandwiches, top with arugula.
