Greek-style scrambled eggs

ingredients

  • 4 eggs, beaten
  • 6 cherry tomatoes, minced
  • 1/2 tsp dried oregano
  • 1 tbsp olive oil
  • salt
  • pepper

instructions

  1. Step 1 Preheat nonstick pan over medium heat. When pan is hot, add olive oil and minced cherry tomatoes, stirring. Cook for 2-3 minutes. Add dried oregano and briefly saute.
  2. Step 2 Add eggs, season with salt and pepper, and scramble to desired doneness. Serve.
