pasta salad with cherry tomatoes, arugula, and goat cheese

ingredients
- penne
- cherry tomatoes
- goat cheese, crumbled
- arugula
- olive oil
- 1 lemon, juiced
- 1 tbsp white wine vinegar
- 1/2 tsp Dijon mustard
- 1/2 tsp honey
- dried oregano
- red pepper flakes, optional
instructions
- Step 1 Start boiling water in large pot for pasta. Meanwhile, prep vegetables and make vinaigrette.
- Step 2 Cut tomatoes in half and add to large bowl along with arugula. Season with salt and pepper.
- Step 3 Make vinaigrette by combining lemon juice with white wine vinegar, honey, and Dijon mustard. Add olive oil in 3:1 ratio of olive oil to lemon/vinegar mixture. Season with salt, pepper, oregano, and red pepper flakes.
- Step 4 Add salt and penne to boiling water. Cook for 10-11 minutes and then drain. Add into bowl with tomatoes and arugula and stir to combine, then mix in vinaigrette.
- Step 5 Refrigerate for at least 1 hour. Add in crumbled goat cheese amd serve.
