pasta salad with cherry tomatoes, arugula, and goat cheese

Italian vegetarian pasta fredda

ingredients

  • penne
  • cherry tomatoes
  • goat cheese, crumbled
  • arugula
  • olive oil
  • 1 lemon, juiced
  • 1 tbsp white wine vinegar
  • 1/2 tsp Dijon mustard
  • 1/2 tsp honey
  • dried oregano
  • red pepper flakes, optional

instructions

  1. Step 1 Start boiling water in large pot for pasta. Meanwhile, prep vegetables and make vinaigrette.
  2. Step 2 Cut tomatoes in half and add to large bowl along with arugula. Season with salt and pepper.
  3. Step 3 Make vinaigrette by combining lemon juice with white wine vinegar, honey, and Dijon mustard. Add olive oil in 3:1 ratio of olive oil to lemon/vinegar mixture. Season with salt, pepper, oregano, and red pepper flakes.
  4. Step 4 Add salt and penne to boiling water. Cook for 10-11 minutes and then drain. Add into bowl with tomatoes and arugula and stir to combine, then mix in vinaigrette.
  5. Step 5 Refrigerate for at least 1 hour. Add in crumbled goat cheese amd serve.
