ingredients
- 1 carrot, chopped
- 1 lb baby potatoes, halved
- 1 sweet potato, chopped
- pearl onions, optional
- dried rosemary
instructions
- Step 1 Preheat oven to 425 degrees. Add parchment paper to sheet pan.
- Step 2 Mix together the vegetables in a large bowl with olive oil, salt, pepper, and rosemary.
- Step 3 Add vegetables to pan, cook for 20-25 minutes, stirring occasionally.
