ingredients

  • 1 carrot, chopped
  • 1 lb baby potatoes, halved
  • 1 sweet potato, chopped
  • pearl onions, optional
  • dried rosemary

instructions

  1. Step 1 Preheat oven to 425 degrees. Add parchment paper to sheet pan.
  2. Step 2 Mix together the vegetables in a large bowl with olive oil, salt, pepper, and rosemary.
  3. Step 3 Add vegetables to pan, cook for 20-25 minutes, stirring occasionally.
